It's a simple sauce with only 6 pantry staple ingredients and whips up in about 10 minutes. And, when dinner time rolls around, you know it's all about the gravy (at least in my house)!
And this gravy is anything but ordinary! You're saying "but wine in gravy?" - yes, absolutely! The addition of the white wine adds that extra special touch and ups the umami flavor of the sautéed mushrooms.
Not a big white wine drinker? No problem! This gravy can be made with or without wine by subbing in more chicken broth.
On the other hand, you opt to make it a darker gravy for red meats with a dry red wine. Want a vegetarian option? Just use a vegetable broth in place of the chicken broth.
Now with Thanksgiving around the corner this gravy is the perfect solution for those having a small scale holiday and cooking a turkey breast, like an air fryer turkey breast.
When cooking a large turkey, making a turkey gravy is easy but, when cooking turkey breasts, that don't create much in the way of drippings, gravy is usually not an option.
However, this mushroom wine gravy pairs excellently with turkey and, of course, those creamy mashed potatoes that are part of the feast. And who wouldn't want some drizzled on their turkey and stuffing too?!

- Meats - poultry, roasted/grilled meats such as steak, pork chops, meatballs (a la Swedish style), meatloaf and even hamburger steaks.
- Potatoes - of course, mashed potatoes but it also works as a great light lunch over baked potatoes.
- Pasta - Just toss cooked pasta with the mushroom sauce and dig in. Want it a little meatier, add your leftover turkey or chicken.
- Vegetables - yep, it even works on them! Try it with grilled/ broiled asparagus, any roasted vegetables or even grilled tofu.

How to Make Mushroom Gravy with Wine
Gather the ingredients - mushrooms (any of the variety listed above), chicken or vegetable stock, white wine, butter, green onions, cornstarch and salt & pepper.
- Melt the butter in a medium skillet. Add the mushrooms and cook 3-4 minutes or until softened. Stir often so they cook evenly. (photo 1)
- Mix in the cornstarch, stirring well. (photo 2)
- Once mixed, add in the chicken broth, wine, seasonings and green onions. (photo 3)
- Cook until gravy starts to thicken. This usually takes about 3-5 minutes. Now it's ready to go! (photo 4)
You don't have to be a mushroom lover to love this white mushroom gravy either. I've found that it's popular with just about everyone.

Mushroom Wine Gravy
Ingredients
- ¼ cup butter
- 2 cups mushrooms sliced
- 2 Tablespoons cornstarch
- 1 ¾ cups chicken broth
- 2-3 Tablespoons Chardonnay or other dry white wine
- 2 Tablespoons green onions or leeks chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a large skillet, melt butter.
- Add mushrooms and cook 3-4 minutes or until softened, stirring often.
- Mix in cornstarch, stirring continuously until incorporated.
- Add in chicken broth, wine, green onions, salt and pepper. Cook, continuing to stir, until thickened, about 3-4 more minutes.
- Serve hot.
