Fall brings to mind Jack-O-Lanterns and pumpkin pie but there are so many more dishes that serve up that great pumpkin flavor. I have been in a pumpkin baking mood lately and the recipe below came out so good I had to share it.
Pumpkin Chocolate Spice Bars
- 1 cup flour
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 3/8 teaspoon nutmeg
- 1/8 teaspoon allspice
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup pumpkin puree
- 1 cup dark chocolate chips, optional
Preheat oven to 350 degrees. Spray a 7×11-inch baking dish with nonstick spray.
Mix together flour, spices, baking soda and salt and set aside.
In a large bowl, using an electric mixer, cream butter and sugar on high until smooth. While continuing to beat, add in egg, vanilla extract and pumpkin puree. Lower mixer speed and beat in flour-spice mixture until just combined. Stir in chocolate chips.
Spread into prepared pan and bake for 30-35 minutes or until toothpick in center comes out clean.
Cool bars in pan on wire rack. When cool, turn out of pan and cut into squares.
Makes about 20 bars.
