I love chocolate pudding! Of course, when you make it right, nice and thick with plenty of cream and chocolate, it isn’t the most healthy dessert around. But instead of giving you a recipe that is full of fat, although delicious, I thought I would pass on this Chocolate Chia Seed Pudding recipe from Christina’s, the other Cookin’ Mama, health & fitness site, Body Rebooted, that is packed with nutrition and energy boosting ingredients. It tastes fantastic and is gluten free too!
I love other healthy desserts that satisfy without the guilt like Healthy Strawberry Sundae Cups, Light Blueberry Crepes and Almond Butter Mug Cake but sometimes you just need chocolate (right?!) and this pudding hits the spot.
Now exactly what are the benefits of eating this pudding over other regular puddings? Well, take a look at what these ingredients provide and make up your own mind.
Chia Seeds - High in fiber, lowers bad cholesterol, aids in preventing fat absorption, high in omega 3 & 6's, antioxidants, calcium, protein and other important minerals.
Cacao Powder - high in protein, fiber, antioxidants, magnesium, calcium, iron and Vitamins B & E. It helps elevate mood and combat depression.
Maca - Offers energy boosts, high in B vitamins and heightens mood while decreasing anxiety.
Easy to make Chocolate Chia Seed Pudding
You do have to plan to make this the day before you want to eat it but it’s as simple as combining the chia seeds with milk, cacao powder, vanilla extract and stevia, stirring, and letting it chill in refrigerator overnight. See, I told you it was easy!
What you get is a creamy, chocolaty pudding that hits the spot without making you feel guilty. Now that’s the kind of dessert I like! And what could be more perfect for the summer bathing suit season than a low fat, healthy, yummy dessert? Ummm, can’t think of anything. Take a bite and enjoy!
CHOCOLATE CHIA SEED PUDDING
Ingredients
- ¼ cup chia seeds
- 1 cup unsweetened almond milk
- 2 Tablespoons raw cacao powder with maca
- ½-3/4 teaspoon pure gluten-free vanilla
- Stevia to taste
Instructions
- Mix all of the ingredients together.
- Refrigerate overnight.
- Garnish with unsweetened coconut flakes or diced dates just before serving. Serve chilled.
