This red, white and blue salad is perfect for a Labor Day picnic and the last hooray of summer. I saw this recipe in an ad for Diamond walnuts and it looked so fresh and fruity I just had to try it. I decided to add almonds instead of walnuts but either nut would work great in it.
This is a salad that just yells summer from the top of its lungs. Blueberries and strawberries are the berries most associated with the long hot days of summer and they are perfect as the star attraction. Oh, I bet you’re wondering where the white comes in. Well the addition of the feta cheese not only brings the color white to the dish but helps to boost the flavor with its bold tanginess. It really is a refreshing and cooling side to have any time the weather heats up.
If you add some chopped rotisserie chicken you can make it into the perfect light lunch or dinner. Leave off the dressing and it works well for packed lunches too. Just make sure to include a side of the tart dressing as it really makes the flavors pop.
Red, White and Blue Salad
- 1/4 cup light extra virgin olive oil
- 1/2 teaspoon grated lemon peel
- 3 Tablespoons lime juice
- 2 teaspoons honey
- 1/2 teaspoon salt
- 5-oz mixed greens
- 6-oz blueberries
- 8-oz strawberries, quartered
- 4-oz feta cheese, crumbled
- 1/4 cup sliced almonds
- Salt & pepper
- 2 large cooked chicken breasts, chopped (optional)
Whisk all salad dressing ingredients together in a small bowl. Set aside.
In a large bowl, place greens and toss with a small amount of dressing. Add remaining ingredients on top, except chicken then drizzle remaining dressing over all.
Serve as a side salad or top with chicken to make this a delicious filling lunch or light dinner.
