OMG is this Tiramisu Oatmeal Bake ever yummy! It tastes like you are having dessert for breakfast & who wouldn’t like that? Its healthy, quick & easy too!
OMG, is this stuff ever yummy! I made it thinking that it would be good but it far exceeded my expectations! It tastes so much like tiramisu with that nice coffee and vanilla flavoring that I might actually be tempted to have it for dessert.
And it’s good for you! Whole rolled oats, purchase gluten-free to make this a gluten-free option, for fiber, cream cheese and almond milk for protein and just a bit of pure maple syrup to make it a little sweet. The coffee is a great flavor adder and has its own supply of antioxidants and, the big plus, can help you burn fat. ‘Nough said!
This is super simple to make and is a great way to get a good breakfast in the morning. Just make it on the weekend, cool, cut into squares and freeze. During the busy work week, when you are trying to get out of the house, just grab a square, heat in the microwave for a couple minutes, scarf it down and go. But you may want to take a seat and savor it because it is that good. I think I just convinced myself to go get another piece. 🙂
2 cups rolled oats (gluten-free variety if needed)
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cocoa powder
4-oz strong coffee (I used a Caramel Macchiato K-cup and my Keurig, which makes a 4-oz coffee perfectly)
3-4-oz. cream cheese, softened
1-1/2 Tablespoons butter, melted
1-1/2 cups vanilla almond milk
1/3 cup pure maple syrup
2 teaspoons vanilla extract
1/2 teaspoon rum extract (optional)
Preheat oven to 375 degrees. Spray an 8-inch square baking dish with non-stick spray.
In a large bowl, combine oats, baking powder, salt & cocoa powder.
In a medium bowl, whisk together the strong coffee and cream cheese. You may have to use a fork to mash the cream cheese a little and help it blend well. Continue to whisk in egg, butter, milk, maple syrup and extracts until well combined.
Mix the liquids into the dry and stir well. Pour into the prepared baking dish.
Bake 35 minutes. Remove and let cool at least 10 minutes before cutting and serving. I like to put a few dark chocolate chips on top as it is cooling then spread to smooth. You could also drizzle a little chocolate over the top or leave off all together.
For on-the-go meal, place in refrigerator until chilled, remove and slice into squares. Wrap squares in plastic wrap and freeze. To reheat, unwrap and place in microwave for 1-1/2 to 2 minutes or until warmed.
