Get tropical! Our pineapple salsa is full of fresh ingredients like pineapple, cilantro, bell peppers and garlic & we’ve added just a hint of heat. Perfect for summer grilling over chicken, seafood or fish.
Bright beautiful colors make me think of clear summer days and tropical beaches. I mean just think of the colors of some of your favorite food and drinks like Chicken with Mango Salsa, Watermelon & Cucumber Salad and Pineapple Coconut Mojito . Once you cast your eyes on this pineapple salsa, it will have you thinking it’s time for vacation!
Our farmer’s market has so much beautiful produce on hand right now that it is hard to leave without picking up one of everything. I bought a beautiful sweet pineapple, some fresh colorful peppers, grabbed some limes from our tree and cilantro from our garden and the only thing I had in mind to make was this delicious salsa.
It’s so easy to make and pairs well with just about any grilled dish such as chicken or seafood and, one of my favorites, as a topping for fish tacos!
If you want your salsa a little heartier, more of a side salad, you can always add a can of drained & rinsed black beans and/or 1 diced tomato. Since I was using mine with a grilled mahi mahi (recipe coming soon) I preferred to keep it lighter & let the sweetness of the pineapple & the heat of the jalapeno show through so I didn’t add either one.
You can make ahead and serve in a bowl, or get a little creative and serve in a pineapple half. Just cut the pineapple in half, carve out the fruit, mix and toss back in. Doesn’t it look festive, perfect for your next party! Enjoy!
