Bright beautiful colors of fresh fruits and vegetables always make me think of clear summer days and island beaches. I mean, some of my favorite food and drinks like Chicken with Mango Salsa, Watermelon & Cucumber Salad and Pineapple Coconut Mojito just scream tropical to me! And once you cast your eyes on this gorgeous pineapple salsa, it will have you thinking it's time for vacation!
Farmer's Markets are the best for fresh produce.
Our farmer's market has so much beautiful produce on hand right now that it is hard to leave without picking up one of everything. I bought a beautiful sweet pineapple and some fresh colorful peppers that was the inspiration to this salsa. I added some limes from my tree and cilantro from my garden and tossed it all together to make this easy, awesomely delicious salsa.
It really is simple to make and pairs well with just about any grilled dish. I've used it for chicken, seafood and as a topping for fish tacos (my favorite)!
If you want your salsa a little heartier, more of a side salad, you can always add a can of drained & rinsed black beans and/or 1 diced tomato. Since I was using this salsa with a grilled mahi mahi I preferred to keep it lighter. This lets the sweetness of the pineapple & the heat of the jalapeno show through.
You can make this pineapple salsa ahead of time and refrigerate until ready to use. Serve it in a bowl as a side, or get a little creative and serve in a pineapple half. Just cut the pineapple in half, carve out the fruit, mix and toss back in. Doesn't it look festive, perfect for your next party! Enjoy!

PINEAPPLE SALSA
Ingredients
- ½ fresh pineapple, diced (about 2 cups)
- ½ cup sweet red or yellow pepper, diced (about ½ of a large pepper)
- ½ cup yellow or red onion, diced
- ½ cup cilantro, chopped
- 1 jalapeno, minced
- ½ teaspoon minced garlic
- 2 limes, juiced (about 4 Tablespoons)
- ⅛ teaspoon salt
Instructions
- Mix all above ingredients together and chill.
