This easy sheet pan shrimp boil dinner has all the flavors of an original boil - spicy shrimp, sausage, corn & potatoes, with less cleanup & on the dinner table in 30.
I don't know about you but I love sheet pan dinners. There is nothing easier to prepare especially on nights when you're wondering whether you will even get food on the table. So just how easy is it?
Sheet pan dinners can be made with just about any meat or fish, tossed with some oil and seasonings and spread on a sheet pan to cook. They are not only fast, you won't have much to clean up afterwards - I mean one sheet pan, a spatula and maybe a bowl. Doesn't that sound great?!
This sheet pan dinner idea came from our delicious recipe for a Beachside Shrimp Boil. There are fewer ingredients than the original and it's a little easier to throw together rather than boiling it on the stovetop. I really love both ways to prepare this dish so I'll let you decide which is better. (I know, cop out, right?)
When making this, you will have to parboil the potatoes, as the shrimp cook much more quickly than raw potatoes. However, to save time, the potatoes can be cooked the day before and stored in the refrigerator until ready to throw the sheet pan dinner together.
I like to toss all my ingredients with the seasonings together in a large bowl. It can also be done right on the cookie sheet to save a dirty bowl but I always feel I get the ingredients covered more evenly with the bowl.
All you have to do after that is lay everything on the cookie sheet and bake. Once done I serve with butter, for the corn, and cocktail sauce, for the shrimp. Voila! Dinner made with just one pan!

SHEET PAN SHRIMP BOIL DINNER
Ingredients
- 1 lb. shrimp, peeled, deveined, tails on
- 6-½ oz dry-cured chorizo
- 2-3 ears of corn, cut in thirds
- 1 onion, cut in chunks
- 6-8 red potatoes, cut in fourths & pre-cooked (see note below)
- 1-2 Tablespoons Old Bay seasoning
- 2 teaspoons minced garlic
- 3 Tablespoons melted butter
- 3 Tablespoons olive oil
- 2-3 Tablespoons dark beer
- Salt & pepper to taste
Instructions
- Preheat oven to 425 degrees.
- Place all ingredients in a large bowl.
- Combine Old Bay, garlic, butter, olive oil, beer and salt & pepper.
- Pour over ingredients and toss with hands to coat.
- Lay ingredients in a single layer on 1-2 cookie sheets.
- Bake for 20 minutes.
- Serve with butter, cocktail sauce and plenty of napkins.
