    An easy summer treat where the best of ice cream meets tasty cake batter! These Cake Batter Popsicles are the answer to cooling off this summer. Kids, and big kids too, love these cool, creamy treats especially with the added fun of colorful sprinkles. These pops will make the hot days of summer a little bit better.

    Who doesn't love ice cream and cake?! And with summer almost here I couldn't pass up this cake batter meets ice cream treat. It was like getting my cake fix but without the cake. The mix of vanilla cake mix with ice cream is genius!

    The flavor that I associate cake was all there along with the cool, creamy smoothness of ice cream. If you ask my grandkids, they will tell you that it was the sprinkles that they liked the most. Of course, the ice cream didn't hurt either. lol

    This recipe was all my granddaughter's idea. She was looking online for something fun to make and pointed to these popsicles and told me that's what she wanted for a treat. I mean, how could I say no!

    Of course, I had to check out a bunch of recipes, and there were many, which to me says her choice was pretty darn good.

    There were some using ice cream and some that suggested yogurt and pudding mix in lieu of the ice cream. Since I was making these pops with my 3-year-old granddaughter I wanted to use the easiest recipe possible. So the recipe with just 5 ingredients, mainly ice cream and cake mix which I had on hand, seemed perfect for us.

    Variations

    • Use funfetti cake mix for even more sprinkles
    • Try with different flavors of cake mix such as lemon, strawberry, or even chocolate (although sprinkles won't show as well)
    • Change out the vanilla ice cream for vanilla yogurt or a flavored yogurt
    • Sub chocolate chips or fresh sliced fruit for sprinkles

    How to make funfetti popsicles

    Prep steps for cake batter popsicles.

    1. Place ice cream (regular or dairy-free) into a blender and pour in your favorite milk. I used 2% but it will also work with almond milk. (photo 1)
    2. Add cake mix. (photo 2)
    3. Drizzle in vanilla extract. (photo 3)
    4. Pour in the sprinkles and when I said pour she sure did! (photo 4)

    1. Mix until completely combined and nice and creamy. She was really serious about doing a good job. I even had trouble getting her to stop. lol

    1. The pops are ready for the freezer! We even got most of it into the molds! Wait about 30-45 minutes then add a popsicle stick into the center of each one. Return to freezer for 4 hours or overnight.

    Doesn't this pic make you want to lick your screen? And it's not only kids that enjoy these cake batter popsicles. They didn't last long with a houseful of adults either. Believe me, once you get a taste of these cold, creamy treats you'll be making them all summer long.

    Cake Batter Popsicles

    Ingredients

    • 3 cups vanilla ice cream
    • ¾ cup white cake mix I like to use Duncan Hines
    • 2 teaspoons vanilla extract
    • 1 cup of your favorite milk
    • ½ cup fun sprinkles

    Instructions

    • Place all ingredients but sprinkles into a blender.
    • Mix until completely combined and nice and creamy.
    • Stir in sprinkles.
    • Pour or spoon into popsicles molds.
    • Freeze for half hour then add popsicle sticks. Freeze again for 4 hours to overnight.
    • Makes anywhere from 6-10 popsicles depending on size of molds.

    Notes

    Some people are leery about using cake mix that isn't baked, although I've never had any problem. If this bothers you, you can heat treat it prior to using. Just spread the ¾ cup cake mix on a parchment lined cookie sheet and bake in 350 degree oven for 5 minutes. Let cool before using in recipe.
