Homemade Rice Krispie Treats have been a classic kids favorite for generations. They're easy to make and the kids and big kids too never get tired of that gooey, chewy sweet flavor.
Ingredients for Rice Krispie Treats
These Easter Rice Krispie treats have only 4 simple ingredients plus your choice of candy and sprinkles. You probably have all the ingredients on hand to whip up this quick & easy homemade snack right now!
- Butter - aids in creating the perfect consistency when mixed with marshmallows. It also helps prevent the treats from becoming too hard to eat.
- Mini marshmallows - hold this treat together and give it that sticky, lick-your-fingers consistency. Make sure these are fresh as well and opt for pastel-colored ones for more of a Easter holiday vibe.
- Lemon juice & lemon zest - is used in lieu of vanilla extract to give an extra burst of spring flavor. Try it, you'll like it!
- Rice Krispies cereal - makes the crisp in this krispie treat. Make sure the cereal is fresh. If making a gluten-free rice krispie treat, double-check to make sure the package indicates the cereal is gluten-free.
- Candy & sprinkles - adds that extra "wow" factor. I like to add pastel m&ms and spring-colored sprinkles to mine. And definitely let the kids in on the fun too!
As you can see, there's a little twist to these treats. They're lemon-flavored! Yep, there's lemon juice and zest added to the mix! It gives these treats an added zing of flavor that reminds me of a glass of cool lemonade.
And that bright, crispy taste pairs perfectly with the crackly cereal, gooey marshmallows, and sweet candy.
With Spring here and Easter around the corner, it's easy to make this tasty snack into special holiday rice krispie treats. Just add your kids' favorite Easter candies, like pastel-colored M&Ms, and a few colorful spring sprinkles and you're all set.
You can even let the kids stir them into the melted marshmallow mixture and watch their eyes light up.
Once the candies are all mixed in, let the kids finish them by patting them into the pan. Then the hard part begins.... waiting for the flavored rice krispie treats to cool before gobbling them up.
Frequently asked questions
They will keep well for 2-3 days in a resealable bag on the counter or up to 6 weeks in the freezer.
The butter and marshmallows need to be cooked over low heat and melted to prevent them from drying out. It may take a little longer but the result will be crisper lighter treats.
Make sure you are using fresh marshmallows. Old marshmallows will tend to form one big clump instead of a nice smooth, creamy mixture.
Pro-Tip: To cut nice clean rice krispie treat squares, spray a sharp knife with nonstick spray. This will keep the mixture from sticking to the knife as you cut.
How to make Easter Rice Krispie Treats
- Melt butter in a large saucepan and add marshmallow.
- Stir continuously until completely melted then remove from heat.
- Add in lemon zest and lemon juice and mix thoroughly.
- Add candy and sprinkles and stir until combined.
- Stir in cereal.
- Immediately pour into a pan that has been lined with parchment paper. Spread evenly using hands sprayed with a little nonstick spray, and press down gently. You don't want to press too hard as it will make them harder to get out. Sprinkle a few more sprinkles on top.
- Once cool, turn out of the pan on to cutting board.
- A neat trick to cutting these treats is to spray a knife with nonstick spray. This will allow the knife to cleanly cut them into squares. Store in an airtight container for up to two days.
I love making colorful Rice Krispie Treats before the holiday to add them to Easter baskets. They can also be made after Easter to use up some of the leftover candy. Whenever you decide to make them, better double the recipe, because these thick and chewy homemade rice krispie treats will be gone before you know it.
