Tropical flavors of pineapple, coconut & rum flavor these moist & delicious Pina Colada Grilled Pork Chops. Top off with grilled pineapple & a side of rice for the perfect dinner.
I’m writing this post early because when you read this I will be at my daughter’s house helping her out upon the arrival of my brand new baby granddaughter Anastatia. I am so excited to have a new little girl in the family that I can spoil. After all, what’s better than cute little frilly dresses, dolls and tea parties?
But I didn’t want to miss the chance to participate in our monthly Secret Recipe Club and visiting a new food blog. This month I got Ashley from Cheese Curd in Paradise, a blog I’ve been wanting to explore for some time. By the way, I’d love to know where that name came from as I am sure there is some story to go with it. Any hints Ashley?
Ashley is married, a working mom, has two adorable children and lives in Green Bay Wisconsin. She seems to love doing things with her family, enjoys cooking and has even managed to get Kellen, her 3 year old, to help sometimes. (I like the way she thinks!) She has got a million and one recipes to choose from, having blogged since 2009, and believe me that made it really difficult to select just one.
I thought about making her Ultimate Sriracha Burger, because we grill all the time in Florida, but I had just finished making some Buffalo Burgers and didn’t want to have burgers again so soon (but I’m keeping this recipe in my back pocket for later). Then I thought why not make a fancy dessert like her Red Velvet Cheesecake and invite the neighbors but, alas, everyone is on vacation and there is no way I’m having an entire cheesecake in the house with no one to share it with (yep, you got it, I’d wind up eating the whole thing). I’m saving 2 of her recipes for when colder weather hits, well kind of cold weather, her Tuna Melt Casserole and Beer Cheese Brat Chowder , but, oh it’s so hard to choose, I finally decided on her Pina Colada Grilled Pork Chops. I mean what could be more perfect for summer than a tropically inspired dinner. Umm, can’t think of anything. 🙂
These grilled pork chops are super easy to make, although you do have to plan ahead, as they require a days soak in a simple marinade. And that marinade smells good enough to drink! And speaking of drinking (well you know I was going to bring this up), combining these pork chops with a pina colada would be like sitting at a luau on a tropical island … OK, I’m getting carried away aren’t I? But it would be delish! To complete the dinner, while grilling the pork chops, I whipped up some pineapple rice and it went with all the tropical flavors perfectly.

- 4 boneless pork chops, about 1" thick
- 1/4 cup pineapple juice
- 1-2/3 cup coconut milk
- 3 Tablespoons dark rum
- 2 Tablespoons lime juice or juice from 1 lime
- 4 pineapple rings
Combine pineapple juice, coconut milk, rum and lime juice in a large gallon ziploc bag. Place pork chops in marinade and seal. Allow to marinate in refrigerator for 8 hours or overnight.
Preheat grill to medium-high heat.
Remove pork chops from marinade and discard marinade. Grill pork chops 14-20 minutes, depending on thickness, turning halfway through cooking time.
With 4 minutes remaining for pork chops, lace 4 pineapple rings on grill and cook 2 minutes per side just to sear.
Remove all from grill and serve with a side a pineapple rice.
