Pumpkin Spice Latte
Hey y'all! I meant to get this post out on Wednesday, then Thursday, well, you get the idea, but moving has really put a crimp in my schedule. Who knew having to pack a whole house that we've been in for 38 years could be so disrupting. lol
Anyhoo, I had to get this yummy "everything pumpkin spice" recipe out to you. It's the perfect beverage for right now, when it feels like it should be fall but it's hot as blazes outside. It's got caffeine to give you that much-needed morning boost, it's cool and it's full of fall flavor. And if you aren't into pumpkin spice yet, you will be after one sip of this iced latte.
I added a little special twist to everyone's favorite Starbucks Pumpkin Spice Latte, a packet of hot cocoa! I'm a firm believer in chocolate at any time of day. After all, who wouldn't like a bit of chocolate to start their day. And if you didn't know that chocolate and pumpkin make an awesome combo, just check out my popular Pumpkin Cheesecake Brownies and you'll be a believer.
This recipe is super simple to make. I made it over ice and stirred but it would be easier to mix the hot espresso and cocoa together then stir in remaining ingredients and pour over ice. Of course, it wouldn't look nearly as pretty but it would taste just as awesome!

What to Make with Leftover Pumpkin Puree
Pumpkin Pie Overnight Oats - an easy to make oatmeal that tastes like fall in a bowl. Make it the night before in a mason jar and it makes a great grab and go breakfast.
Baked Pumpkin Doughnuts - Fresh autumn flavor for breakfast in a baked doughnut that's sprinkled with plenty of crumbs. Wake up in the morning and have them in your mouth in 20 minutes.
Pumpkin Caramel Popcorn - A sweet treat just for fall. Fresh popped popcorn, flavored with pumpkin puree, pumpkin spice, maple syrup and, of course, caramel. Perfect for movie nights.
This beverage is perfect for sipping on a hot fall day. No need to go to your local coffee shop for your specialty latte, just whip it up at home. The cool flavor of pumpkin pie mixes with deep, rich roasted coffee, then finished with the sweet taste of chocolate and maybe, just maybe, some whipped cream. It's a delicious eye-opening beverage to start your day or a refreshing, flavorful afternoon treat.
