Ingredients
For cake mix red velvet brownies:
- Red Velvet Cake Mix - Duncan Hines or Betty Crocker recommended
- Vegetable Oil
- Eggs
- Vanilla Extract - make sure to use pure extract for the best flavor
- White Chocolate Chips - Ghirardelli brand recommended
For cream cheese frosting:
- Cream Cheese - use full fat for the creamiest frosting
- Butter - make sure it is room temperature for the easiest blending
- Vanilla Extract
- Powdered Sugar
How to Make Red Velvet Brownies with Cake Mix
- Pour red velvet cake mix into a large bowl.
- Add eggs, oil, and vanilla extract.
- Stir well,
- Fold in white chocolate chips.
- Fill an 8x8-inch baking pan that has been sprayed with nonstick spray with the brownie batter.
- Bake for 20-25 minutes at 2350 degrees. Remove from oven and let cool in the pan on a wire rack.
How to Make Cream Cheese Frosting for Brownies
- While the brownies are cooling, make the cream cheese frosting. Place room temperature cream cheese and butter in the mixing bowl of an electric mixer.
- Beat well for 2-3 minutes or until light and fluffy. Continue to beat while adding vanilla extract.
- Gradually add powdered sugar.
- Continue mixing until you have a smooth and fluffy mixture of frosting consistency. If your frosting is too thick, try adding a tablespoon of cream.
Frost the brownies when they are completely cooled. You have two options here. You can either frost them in the pan or chill the pan of brownies then remove them from the pan onto a wooden cutting board and then frost.
To finish, sprinkle the frosted red velvet brownies with sprinkles appropriate to the occasion. As you can see, these are my red velvet brownies Valentine's Day special. They also work with red and green sprinkles for Christmas too. Of course, don't let that stop you from making this red velvet brownies recipe any time of year.
Recipe Variations
- Add 1 more egg for cake-like brownies.
- Use dark or milk chocolate chips instead of white chocolate chips.
- Leave off the frosting and just sprinkle some powdered sugar on top.
Recipe Tips
- Line the baking pan with parchment paper for easier removal of brownies from the pan. If you grease the pan first, the parchment will stick to the sides of the pan. If the parchment is at least 1 inch higher than the top of the brownies, you can use it to lift the brownies out of the pan.
- Do not overmix the batter.
- Cool the brownies in the pan completely before removing them from the pan or slicing them.
How to Tell When Brownies are Done
You don't want to overbake brownies or they will be dry. You can tell these red velvet brownies are done when a toothpick inserted in the center comes out with a few moist crumbs and maybe a slight smear of red.
Best Way To Cut Brownies
- Refrigerate the brownies until they are thoroughly chilled.
- Remove them from the pan and place them on a cutting board.
- Use a long kitchen knife (with a 10-inch blade or longer) and cut straight down.
- Wipe off the blade after each cut.
How to Decorate
Sprinkle the top with red sprinkles, red heart-shaped sprinkles for Valentine's Day, red star-shaped sprinkles for Christmas, or red jimmies.
How to Store and Freeze
The brownies need to be refrigerated because they have cream cheese frosting.
Place the frosted brownies in an airtight container with parchment or wax paper between the layers. Refrigerate them for up to 5 days.
Freeze the brownies in a freezer-safe container for up to 3 months. Thaw them in the refrigerator overnight.
