S'mores Empanadas are a sweet version of the typical savory Mexican empanada. Flaky dough that's been lightly sweetened, is filled with chocolate and marshmallows and baked to a golden finish. Dusted with powdered sugar and drizzled with chocolate, they're an irresistible after school snack, dessert and perfect finger food for the holidays.
It's the last day of Choctoberfest and I couldn't pass up the chance to make some form of my favorite s'mores. I love all the warm chocolate and gooey marshmallows that comprise these sweet treats. I've even made my own versions, like S'mores Coffee, S'mores Christmas Crack and S'mores Halloween cookies.
And now that the weather here in Georgia is turning cooler, I've been enjoying some s'mores by our firepit. But what to do when winter comes? Why, bake up some of these flaky, warm S'mores Empanadas in your oven!
The dough is super easy to make too, just one bowl and 5 simple ingredients. And what's truly amazing is the result - light and flaky with just a hint of sweetness. Yep, these s'mores empanadas are the sweet version of the standard savory Mexican favorite and they're every bit as delicious.
This dough can be stuffed with just about anything from pie fillings to leftover Halloween candy. This time around I chose to stuff them with chocolate chips and mini marshmallows but maybe next time I'll opt for nutella. Umm, just a thought.
Of course, I couldn't help myself, and topped each of these chocolate empanadas with a dusting of powdered sugar and a chocolate drizzle. YES! Just take a look at that beautiful pastry and that rich warm, oozing chocolate. Don't you just want to lick your screen?
Variations
Sweet empanada dough can be filled with just about anything. Check out some of my favorites.
- Just add chocolate. This can be in the form of chocolate chips or a piece of a chocolate bar. And with Halloween around the corner, it's a great way to use up that Halloween candy.
- Add a half of a Reese's peanut butter cup to the center.
- Try it with your favorite pie filling such as apple, cherry, blueberry or peach. It's like a homemade hand pie.
- Bananas and chocolate are always a great combo.
- Apples and cinnamon with a drizzle of caramel are great for the fall season.
How to make
Gather the simple pantry ingredients.
- Place flour, sugar and salt in a bowl. You can also use a food processor or chopper.
- Add cold diced butter.
- Add milk to the mix.
- Then add whole egg.
- Mix until it resembles a soft dough, kneading a little with your hands for just a minute or so.
- Form into a ball then flatten into a disk. Wrap in plastic wrap and place in refrigerator for about 30 minutes.
- Roll the dough out on a floured surface to approximately ⅛” thick and cut into 5” circles with a glass, bowl or cookie cutter. I used a margarita glass. 🙂
- Lay the dough circles on a parchment lined cookie sheet.
- Fill each circle with chocolate chips and mini marshmallows. If you want, you can also include a small piece of graham cracker.
- Brush a little beaten egg white on the edges of the circle then fold over and press edges to seal.
- Using the tines of fork, work around the sealed edges, pressing so that it helps seal them a little better. Brush the tops with beaten egg and bake until golden.
I love to make these sweet s'mores empanadas for after school treats and finger foods for holiday parties. They're great to make with the kids too and let them stuff them with whatever they want. They're one fantastic snack or dessert you can have all winter long. Enjoy!

S’mores Empanadas
Ingredients
- 1 ½ cups flour
- 2 Tablespoons sugar
- Pinch of salt
- ½ cup or 1 stick butter
- 1 egg
- 2 Tablespoons milk
- Chocolate Chips or piece of chocolate bar
- Mini Marshmallows
- Graham crackers optional
- Egg for egg wash powdered sugar, chocolate chips and oil for drizzle
Instructions
- Place flour, sugar, salt and butter in a medium bowl.
- Add egg and milk and mix until it resembles a soft dough. This can be done in a food processor or chopper too.
- Take out and knead a little with your hands for just a minute or two.
- Form into a ball and flatten into a disk. Wrap in plastic wrap and place in refrigerator for about 30 minutes.
- Preheat oven to 400 degrees. Line a cookie sheet(s) with parchment paper.
- Roll dough out on a floured surface to approximately ⅛” thick.
- Cut into 5” circles with a glass, bowl or cookie cutter.
- Fill each circle with chocolate chips and mini marshmallows. You can also add a piece of graham cracker but it's totally optional.
- Brush a little beaten egg white on the edges of the circle then fold over and press edges to seal.
- Using the tines of fork, press the edges to further help with the seal.
- Beat an egg and brush the tops of the sealed empanadas.
- Bake for 12-15 minutes or until empanada is a nice golden color.
- Remove from oven and dust with powdered sugar then drizzle with chocolate.
Chocolate Drizzle
- To make chocolate drizzle, melt about ½ cup chocolate chips in microwave in 30 second increments, stirring in-between until melted.
- Add a little vegetable oil to melted chocolate until liquid enough to drizzle.
- Using a fork, drizzle lightly over the tops of the empanadas.
