Sunday is suppose to be a day of rest and that should go for Moms too. So make this simple dish that everyone loves – Sloppy Joes. Serve alongside corn on the cob and cole slaw or french fries and you have yourself a winner. (psst – and let the guys clean up)

Sloppy Joes

Ingredients:

  • 1 lb. ground beef or ground turkey
  • 1 onion, chopped
  • 2 teaspoons minced garlic
  • 1 red pepper, chopped
  • 1 jalapeno, minced
  • 1 15-oz can pinto beans, drained
  • 1-1/4 cups tomato sauce
  • 1/4 cup favorite BBQ sauce
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon vinegar
  • 1 Tablespoon brown sugar
  • 1 teaspoon mustard powder
  • 1/2 teaspoon salt
  • ground pepper to taste 

Directions:

In a large skillet, cook meat until done. Drain. Add onion, garlic, red pepper and jalapeno to pan and cook 5-7 minutes more. Add remaining ingredients, turn heat lower, and simmer for 30 minutes or until some of the liquid has been reduced.

Serve on hamburger buns. I like to toast mine first so that it holds the sloppiness better.

Serves 6.

Tip: To make gluten-free, check the tomato sauce and barbecue sauce to make sure it states gluten-free as these items almost always contain some sort of wheat filler. Serve either with a gluten-free bun or bread or over a gluten-free pasta.
