  • 1 banana, mashed
  • 2 egg whites, beaten
  • 1 Tablespoon coconut or almond flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon chia seeds
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon cinnamon


  1. Mix all ingredients together.
  2. Heat coconut oil in large flat skillet or griddle.
  3. Once hot, place 1/4-1/3 cup batter per pancake on skillet.
  4. Wait for bubbles to appear on top of pancake then turn and cook until golden brown.
