Waldorf Salad is a refreshing, crunchy salad that combines apples, grapes, and celery with glazed walnuts and creamy yogurt. Great for fall and holiday time.
2-3apples (red, green, or a little of both)chopped
2teaspoonslemon juiceto prevent apples from browning
½cupgrapes (red, green, or a little of both)sliced in half
½cuppomegranate seeds
1cupcelerydiagonally sliced
½cupplain or vanilla Greek yogurt
Maple Glazed Walnuts
½cupwalnutschopped
4teaspoonsmaple syrup
⅛teaspoonsalt
Instructions
Salad
Chop apples and place in medium sized bowl.
Sprinkle with lemon juice to keep them from browning.
Slice grapes and add to apples.
Sprinkle in pomegranate seeds.
Chop celery and toss with other fruit.
Stir in maple-glazed walnuts. (See notes for how to make them ahead of time.)
Fold in yogurt until all ingredients are well covered.
Chill.
Maple-Glazed Walnuts
Heat a skillet over medium-high heat then add walnuts, maple syrup, and a dash of salt.
Stir fry until caramelized about 3-4 minutes. Cool.
Notes
STORINGKeep the salad in an airtight container in the refrigerator. It will last up to 3 days. Note the apples may turn brown even though they are coated with lemon juice and yogurt.Freezing Waldorf salad is not recommended.
