MEATLOAF CUPCAKES

Make these cute individual meatloaf cupcakes baked in a muffin pan & topped with creamy whipped potatoes. Dinner's on the table quicker & there's sure to be plenty of smiles when served.

Ingredients

  • 1-1/2 lbs. ground beef
  • 1/3 cup Italian bread crumbs or use oats for a healthier option
  • 1/2 cup onions, chopped
  • 1/2 cup ketchup
  • 1 egg
  • 1 teaspoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt & pepper
  • 1/4 cup Parmesan or Pecorino Romano cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Mix all of the above ingredients in large bowl. 
  3. Divide mixture into wells in muffin pan & pat down. You should get between 6 & 8 depending on your serving size. (Round top slightly if you like more of the look of muffins)
  4. Bake for 25-30 minutes. Let cool slightly in order to be able to remove meatloaf cupcakes easily.
  5. Place meatloaf cupcakes on serving dish and top with mashed potatoes. I like to pipe mine on with my OXO Decorating Kit or you could use a cookie press.
