Garnish: additional slices of lime and cucumber & sprig of mint
Instructions
Fill your blender with all ingredients except the prosecco. Blend well.
Remove from blender and strain into large pitcher. Discard the pulp.
Chill juice until ready to serve.
Just prior to serving, add slices of limes and cucumbers as well as ice to the pitcher. Pour in champagne and serve in glasses filled with ice and garnished with a slice of lime and cucumber and a sprig of mint.

Variations
Add basil in place of cilantro (for all those who are not fans of this lovely herb) for a cucumber basil cocktail
Change out the vodka for gin and combine with basil and mint for a summery gin fizz
Opt for lemonade in lieu of lime juice and agave nectar.
Add grated ginger with basil, mint and gin for a fresh take on a martini
Add the sparkle with prosecco, champagne, seltzer water or maybe a lime sparkling water
Opt for tequila, such as Titos gluten-free vodka, for a tequila cucumber cocktail
Last but not least, if you are into heat, add a few jalapeno slices to the mix. It gives this cucumber drink an extra kick that takes it above the ordinary.
