  • 10 small empanada discs
  • 3 Roma tomatoes chopped and drained of excess juice
  • 6 oz.  mozzarella cheese diced
  • 10-12 basil leaves chopped
  • salt and pepper to taste
  • Garnish: olive oil with balsamic vinegar for drizzle

  1. Preheat oven to 425 degrees. Prepare a muffin pan by spraying with nonstick spray.
  2. Taking one empanada disc at a time, pinch edges into small pleats to make the shape of a small bowl. Press these pleats firmly against the edge to hold the shape.

  3. Place into muffin pan and cover with a slightly dampened paper towel.
  4. Continue with remaining empanada discs.
  5. Divide 3 ounces of mozzarella evenly between the empanada bowls.
  6. Add the chopped tomato and basil.
  7. Sprinkle them with salt and pepper to your taste.

  8. Top with remaining mozzarella.
  9. Bake in preheated oven for 15 minutes or until empanadas and cheese are browned.

  10. Let rest 5 minutes then serve.
