  • 2 oz espresso or strong coffee I brew a 4-oz cup in my Keurig and use half
  • 1 packet hot cocoa mix (use dairy-free version if necessary. I like either Coconut Cloud or Castle Kitchen
  • 2 Tablsepoons pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 2-3 teaspoons agave
  • 1/2 teaspoon vanilla extract optional
  • 1/2 - 1 cup of your preferred milk depending on your strength preference (I used almond milk)

  1. Mix hot coffee and hot cocoa mix together. Stir.

  2. Add remaining ingredients except milk and stir.

  3. Pour over ice.

  4. Add milk slowly if you want to get a nice layered effect.

Recipe Notes

Note: To make dairy-free, use almond milk and a dairy-free cocoa mix such as Coconut Cloud Dairy-Free Instant Hot Cocoa Mix or Castle Kitchen Premium Hot Chocolate.

What to Make with Leftover Pumpkin Puree

Pumpkin Pie Overnight Oats - an easy to make oatmeal that tastes like fall in a bowl. Make it the night before in a mason jar and it makes a great grab and go breakfast.

Baked Pumpkin Doughnuts - Fresh autumn flavor for breakfast in a baked doughnut that's sprinkled with plenty of crumbs. Wake up in the morning and have them in your mouth in 20 minutes.

Pumpkin Caramel Popcorn - A sweet treat just for fall. Fresh popped popcorn, flavored with pumpkin puree, pumpkin spice, maple syrup and, of course, caramel. Perfect for movie nights.
