28-oz chicken breastscut in half lengthwise if too thick
½cupItalian style panko
½cupParmesan cheesegrated
⅓cupall-purpose flour
1egg with a little waterbeaten
Cooking spray
2-3slicesmozzarella cheese
½cupmarinara sauce
Garnish: additional marinara and parsley
Instructions
Preheat air fryer to 360 degrees and press start (if yours doesn’t have a preheat cycle, just set to 360 for 5 minutes)
Prepare an assembly line of ingredients to make coating the chicken easier.
Put flour in bowl or small plate.
Beat egg with a little water in a large bowl.
Mix panko and parmesan on a large plate.
Now dredge chicken breasts in flour, then dip into egg wash, then coat with panko/cheese mixture.
Spray heated basket of air fryer with nonstick spray.
Place breaded chicken in basket and spray top of chicken with nonstick spray. I like to use olive oil but vegetable oil would work too.
Cook for 12 minutes.
During last 2 minutes, take basket out of air fryer and place on heatproof surface. Top chicken with a small amount of marinara sauce then a slice mozzarella cheese.
Return air fryer basket with chicken to air fryer and cook remaining two minutes.
Remove to serving plate and garnish with additional marinara and a sprinkle of parsley. Serve with pasta and a side salad.
Depending on the size of your chicken breasts, this recipe can serve anywhere from 2-4.
Notes
Tips and tricks
Use good quality chicken for the best results. I like to use organic chicken.
For a crisper chicken breast, use panko instead of seasoned breadcrumbs.
Always preheat the air fryer for 5 minutes so that the chicken cooks evenly throughout. If your air fryer doesn't have that function, just turn on to the appropriate temperature for the dish for 5 minutes then proceed to cook as normal.
Usually chicken breasts are quite large. In order to cook in uniformly, slice the chicken lengthwise into 2 portions.
In this Air Fryer Chicken Parmesan recipe, it is not necessary to turn the chicken halfway through. However, it won't hurt the outcome if you prefer that method.
DO NOT overcook the chicken. If you are unsure if the chicken is done, use a thermometer. It is done when the temperature reads 165 degrees.
