The Kiwi Mojito with Tequila is a light, refreshing easy-to-make cocktail. It's tropical flavor makes this sparkling tequila mojito the perfect summer drink.
2teaspoonssugar or use ¾ teaspoon agave syrup or ½ oz simple syrup
1 ½oztequila
2ozor more chilled club soda
Ice
Instructions
Place mint leaves, chopped kiwi, lime juice and sugar In a mason jar or cocktail shaker. Muddle well.
Add tequila and ice to fill the shaker.
Shake until well chilled and slightly frothy.
Pour into a highball glass or leave in the mason jar and top with club soda.
Garnish with a slice of kiwi and a lime.

TIPS FOR THE BEST KIWI MOJITOAlways start with ripe kiwis so they are sweet, not sour. Usually leaving them on the counter for a day or two will ripen them sufficiently.The best way to peel a kiwi is to cut it in half and scoop out the center then slice.Bruise the mint to release its fragrant oils but don't pulverize it. A cocktail muddler or the handle of a wooden spoon works the best.Make the mojito just the way you like them.
