This refreshing Pineapple White Wine Sangria is perfect for summer. Summer fruits, soaked in wine, are topped off with a little bubbly, for the perfect summer cocktail.
1bottle White wine like Moscatopinot grigio or Sauvignon blanc
½cuppineapple chunks
1mangochopped
1orangesliced then halved
½cupstrawberriessliced
2cupsProseccosparkling coconut water or sprite
Pineapple sorbet or sherbeta scoop on top of each drink as a floater
Garnish with pineapple and mint
Instructions
In a large pitcher, combine pineapple juice, coconut rum and moscato.
Add all fruit and place in the refrigerator for at least 2 hours or, even better, overnight.
Just prior to serving add prosecco. (this can be done into a pitcher for a party or individually into each glass)
Pour sangria into glasses filled with ice (or frozen fruit) and top each with prosecco, if not added to pitcher.
Add a scoop of pineapple sorbet as a topper then garnish with a wedge of pineapple and a sprig of mint.

WHITE WINE OPTIONSStick to white wines that are dryer, crispy, and with more acidity such as Pinot Grigio, Albarino, Moscato, Sauvignon Blanc, and even a rose. It doesn't have to be a top-of-the-line wine but one that is tasty enough that you would drink by itself.FRUIT OPTIONSMangoes, strawberries, raspberries, oranges, lemons, grapes, peaches, kiwi, and pineapple all work well. Choose the fruit combinations you like best or ones that might have a similar flavor to the notes of the white wine you choose.
