These soft and crumbly Heath Bar cookies have just 4 ingredients and bake up into delicious bite-sized cookies complete with a chocolate toffee crunch.
Preheat the oven to 350° F. Line a cookie sheet with parchment paper. Set aside.
In a medium bowl, combine the sugar cookie mix, butter, and egg and mix with a spoon.
Add the toffee bits to the cookie batter. Mix until fully incorporated into the batter.
Let the dough rest on the counter for 30 minutes. This will allow the cookie mix to absorb the butter and egg.
Using a small cookie scoop (a little over a tablespoon), scoop the dough onto the prepared cookie sheet. Do not flatten the cookies.
Bake for 14 minutes.
Remove from the oven and let the cookies cool on the baking sheet for 10 minutes.
Remove the cookies from the baking sheet and place them on a wire rack until completely cool.
