Our easy to make Sausage Apple Breakfast Casserole is perfect the busy weeks ahead. Layers of sausage, apple, cheese & eggs is both healthy and delicious.
8-ozbreakfast sausageuse turkey for a low-fat option
1applepeeled, cored & chopped
½cuponionchopped
3-4cupssourdough or French breadcubed
½cupcheddar cheeseshredded
6eggs
6Tablespoonsalmond milkor milk of choice
½teaspoonsage
½teaspoonsalt
½teaspoonpepper
1teaspoonrosemaryminced
Instructions
Preheat oven to 375 degrees. Spray an 8x8-inch baking dish with nonstick spray.
In a large skillet, cook sausage, breaking up as it cooks, with apple and onion until sausage is completely cooked through. Drain on paper towel.
Add bread cubes to bottom of prepared dish. Spread with sausage-apple mixture. Sprinkle with cheese.
Whisk eggs, milk and seasonings, except rosemary, together then pour over top of casserole. Sprinkle with rosemary.
Bake 25-30 minutes.
Notes
I like to cut mine in single portions and wrap with saran wrap then freeze. When one is needed for breakfast, just take out of freezer, unwrap and heat on microwave safe dish for 1-2 minutes.
