Preheat oven to 350 degrees. Grease and flour a 9x5-inch loaf pan. Set aside.
In a large bowl, place sugar and shortening together and cream well.
Add eggs and vanilla and mix well.
Stir in mashed bananas.
Combine the remaining ingredients, excluding chips, and mix into banana-egg mixture.
Fold in chocolate chips.
Pour into prepared loaf pan and bake for 65-75 minutes or until toothpick in center comes out clean.
Remove from oven and set on wire rack to cool for 15 minutes. Remove from pan and finish cooling bread on rack.
Notes
I store mine in a gallon-sized Ziploc bag. It keeps the bread perfectly moist for about 1 week or I label it and store it in the freezer for a special occasion.
What Else Can I Do with Overripe Bananas?
Replace eggs in chewy baked goods like brownies with 1 ripe banana for every egg.
Replace butter in baked goods by using the same amount of mashed bananas as butter and reducing the cooking time slightly.
Use a ripe banana as a flour substitute in Banana Pancakes.
Freeze slices of banana and cover then with chocolate for a cool treat that's actually healthy.
