An easy summer treat where the best of ice cream meets tasty cake batter! These Cake Batter Popsicles are the answer to cooling off this summer. Kids, and big kids too, love these cool, creamy treats especially with the added fun of colorful sprinkles. These pops will make the hot days of summer a little bit better.
Place all ingredients but sprinkles into a blender.
Mix until completely combined and nice and creamy.
Stir in sprinkles.
Pour or spoon into popsicles molds.
Freeze for half hour then add popsicle sticks. Freeze again for 4 hours to overnight.
Makes anywhere from 6-10 popsicles depending on size of molds.
Notes
Some people are leery about using cake mix that isn't baked, although I've never had any problem. If this bothers you, you can heat treat it prior to using. Just spread the ¾ cup cake mix on a parchment lined cookie sheet and bake in 350 degree oven for 5 minutes. Let cool before using in recipe.
