½cupbreakfast sausage or chorizocooked & crumbled (about 4-oz)
4eggs
Salt & pepper to taste
½cuppepper jack cheeseor Monterey Jack for a milder flavor
Tortilla chipscrushed
Garnish: chopped cilantro
Instructions
Preheat oven to 400 degrees.
Spray 4 ramekins with nonstick spray and place on foil-lined cookie sheet.
Spoon Rotel evenly between ramekins.
Sprinkle cooked sausage over tomato mixture.
Make a slight well in the center of the sausage-tomato mixture. Crack egg into it being careful to preserve yolk.
Sprinkle tops with cheese then with crumbled tortilla chips.
Bake for 15 minutes for soft yolks and slightly longer for cooked-through yolks.
Remove from oven and garnish with chopped cilantro. Serve hot.

Variations
Make these easy huevos rancheros into a hearty vegetarian dish by omitting the sausage and adding refried black beans and garnishing with chopped avocado.
Only like scrambled eggs? Just whipped the eggs and top the sausage with the scrambled version and bake as usual.
Change out the sausage for even spicier chorizo. Oh, it's so good!
Like it less spicy? Sub cheddar, Monterey Jack or cotija cheese for the Pepper Jack.
