Flour & baking soda Buttermilk & eggs Sugar & oil Carrots & pineapple Coconut & walnuts
INGREDIENTS
Step 1
Whisk together eggs, sugar, oil, buttermilk, and vanilla extract.
DIRECTIONS
Steps 2 & 3
Combine flour, baking soda, salt and cinnamon. Add to wet ingredients.
Steps 4 & 5
Mix batter well. Add carrots, pineapple, coconut and nuts. Stir.
Step 6
Pour batter into a baking pan and bake at 350° for 40-45 minutes.
Step 7
Mix an easy buttermilk glaze and pour over the top of the baked carrot cake. Let cool.
Step 8
Whip up your favorite cream cheese frosting and smooth it over the cake. Decorate as desired.
