Crockpot Cola Pork Roast is an easy stress-free dinner. One pot on low for 7-8 hours cooks up a juicy, caramelized pulled pork meal with the most incredible gravy.
In a small mixing bowl, stir together green chiles, tomato paste, spices, brown sugar and salt to make a paste.
Smear paste all over meat then place meat in slow cooker/instant pot with any remaining paste.
Pour coca cola over the meat and cover.
Set on low setting for 7-8 hours. Pork is done when it falls apart when poked with fork.
Remove pork from cooker to cutting board and shred using two forks or bear claws.
Place pork back into slow cooker and mix with sauce. Keep warm or ladle into serving bowl and serve immediately.
