Air fryer basque burnt cheesecake has the taste of cheesecake and the creaminess of a souffle. The caramelized top complements the delicate custard interior.
Prepare springform pan by buttering bottom and sides then placing a piece of parchment paper in the bottom. Butter parchment as well.
Graham Cracker Crust
Mix all ingredients for crust.
Pat crust into bottom and up sides of pan. Chill while making filling.
Cheesecake filling
Place cream cheese and sugar in a mixing bowl and cream well.
Add eggs, vanilla extract and flour and mix until combined.
Fold in sour cream.
Pour filling into graham cracker crust.
Preheat air fryer for 4 minutes at 350 degrees.
Place cheesecake into air fryer and cook for 30 minutes. Top will look very dark brown almost burnt.
Once time is up, leave in the air fryer for 30 minutes and let it continue to cook with the residual heat.
Remove to wire rack and let cool to room temperature then chill for 6-8 hours prior to serving.
Remove from pan and serve as is or top with your favorite topping.

STORE/FREEZEStore this cheesecake in the refrigerator as you would any other type of cheesecake. Place it in an airtight container or wrap it in several layers of plastic wrap. It will last up to 3 days.To Freeze: Either wrap the whole cheesecake or wrap individual slices with plastic wrap and then aluminum foil. Freeze it for up to 3 months. Thaw it in the refrigerator overnight prior to serving.
