Instructions
Chicken
Cook frozen grilled chicken according to package directions. It can usually be cooked in an air fryer at 375°F for 6 minutes. You can also use rotisserie or leftover chicken cut into strips or shredded.
Sprinkle a little lemon juice over it for a fresher more vibrant taste. Set aside.
Salad
In a medium bowl, combine chopped romaine, halved tomatoes, shaved Parmesan cheese, and bacon bits. Stir in dressing.
Pesto
Add fresh parsley, dill, garlic clove, walnuts, parmesan oil, and salt to a food processor or blender.
Process until thick and smooth. If it is too thick, add a bit more olive oil. Set aside.
Assemble Wraps
Lay the tortillas flat. Spread each with 1-2 tablespoons pesto. Evenly divide the Caesar salad and strips of chicken between the tortillas. Fold the sides in then roll the tortilla up tightly. Secure with a toothpick and serve.
Notes
Homemade Caesar Dressing
Ingredients:
¼ cup mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
½ teaspoon minced garlic
5 tablespoon fresh lemon juice
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup extra light olive oil
⅓ cup freshly grated Parmesan cheese
InstructionsIn a large bowl, combine mayonnaise, mustard, Worcestershire sauce, garlic, lemon juice, salt, and pepper. Whisk well.Continue to whisk and slowly drizzle in olive oil until thoroughly mixed. Add parmesan and stir.
