Cinnamon Roll French Toast is a breakfast treat that combines cinnamon rolls and creamy custard in an easy make-ahead casserole. Perfect for holidays and special occasions.
Cover the bottom and sides of a 9x13-inch baking dish with melted butter.
Divide the cinnamon rolls into individual rolls. Place 3 across and 4 down the long side, then make another layer on top of those rolls with the remaining cinnamon rolls.
In a medium bowl, whisk the eggs.
Add half and half, cinnamon and vanilla extract and blend well.
Pour the egg mixture over the stacked rolls.
Pour half of the maple syrup over the cinnamon rolls and sprinkle with the chopped pecans.
Bake for 23-25 minutes, or until golden brown.
To finish, pour the remaining maple syrup over the cooked French toast then drizzle with the icing provided with the cinnamon rolls. You may have to warm the icing slightly to make it pourable.
Serve hot right out of the oven.
