Corned Beef Burgers with Guinness Caramelized Onions
Corned Beef Burgers with Guinness caramelized onions are juicy, savory, and loaded with bold Irish flavor. Topped with melty cheese and crispy bacon, they’re the ultimate burger for St. Patrick’s Day.
Heat oil and butter is a stainless steel skillet over medium heat.
When the oil starts to bubble, add the brown sugar and stir. Add the onions and cook for 5-7 minutes until they start to soften.
Turn the heat down to medium low and add the Guinness. Stir every few minutes until most of the liquid has evaporated, about 40 minutes. The onions should be dark brown and soft. Set aside.
While onions are cooking, fry up the bacon until crisp and set aside.
Corned Beef Burgers
Grind corned beef with either a meat grinder or short pulses on a food processor. Combine with ground beef, egg, and Worcestershire sauce. Mix with hands and try not to overwork the mixture. Form into 4-5 patties.
Heat 1 teaspoon of oil in a stainless steel skillet over medium heat. Using SS will help with searing and browning the burgers, giving them the best flavor.
Wait until the pan is hot, then place the burgers in the skillet and pan fry for 3-4 minutes per side. When they are done cooking, remove from heat and top each burger with a slice of Swiss cheese and cover pan until the cheese melts.
To serve, place a burger on a hamburger roll, top with some of the caramelized onions then a strip of bacon. Place the other half of the bun on top and serve with fries and a Guinness (of course). You can add mustard to the bun as an option.
Note: These burgers can also be grilled over medium high heat. Cook for 5 minutes per side.

STORE/FREEZE/REHEATStore leftover cooked burger patties in an airtight container in the refrigerator for up to 3 days. Store the onions separately in an airtight container.To freeze, wrap cooked patties tightly in plastic wrap and place in a freezer-safe bag. Freeze onions in a freezer-safe container. They will keep for up to 3 months.Reheat burgers in a skillet over medium heat until warmed through, or in the oven at 350°F. Add cheese during reheating if desired. Reheat onions in the microwave for 30-60 seconds.
