This easy lemon zucchini quick bread is moist, fluffy, and bursting with bright citrus flavor, topped with a tart-sweet lemon glaze. Perfect for breakfast or an afternoon treat!
2cupsgrated zucchini (do not squeeze out moisture)(approx. 2 small or 1 large)
Glaze
2cupspowdered sugar
3Tablespoonsfresh lemon juice
Instructions
Bread
Preheat oven to 325°F. Spray 2 9x5-inch loaf pans with nonstick cooking spray or butter.
In a large bowl, combine first 5 ingredients, stir, then add remaining ingredients. Mix well.
Divide the mixture between two loaf pans.
Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
Cool 15-20 minutes in pan. Run a knife around the edges. To make sure it is not stuck to the bottom, gently lift at the edges and sides with a spatula. Use a wire rack and place over the top of the bread. Turn it out of the pan then invert it onto another wire rack and let it cool completely.
Glaze
Whisk powdered sugar and lemon juice together until smooth.
Once the bread has cooled, drizzle over the top of each loaf. Let sit until the glaze has set.
Store in a resealable plastic bag or covered on a plate at room temperature. It will also freeze well.

STORE/FREEZEStore cooled bread in an airtight container or resealable bag at room temperature for up to 4 days.Freeze the unglazed (preferably) or glazed loaf tightly wrapped in plastic wrap and then in aluminum foil, or place it in a freezer-safe bag. Freeze for up to 3 months. Thaw in the refrigerator or at room temperature, then add the lemon glaze (if unglazed) just before serving.
