Ingredients

coleslaw mixture

cup
fresh pineapple
diced

red bell pepper
sliced thin then halved

fresh cilantro
chopped

scallions
thinly sliced (about 1 small scallion)

jalapeño
seeded & minced (1 small jalapeno)

lime
zested & juiced

honey

teaspoon
kosher salt

extra-virgin olive oil
Instructions
In a large bowl, combine coleslaw mixture, pineapple, sliced bell pepper, chopped cilantro, minced scallions, and jalapeño. Toss together.
Whisk together lime zest, lime juice, honey, salt, and pepper in a small bowl. Gradually pour in oil, whisking until smooth.
Pour the lime vinaigrette over the coleslaw mixture and toss well.
Place the coleslaw in the refrigerator and let it rest at least 15 minutes so the flavors marry. Toss again before serving.
Notes
STORE
Store the leftover coleslaw in an airtight container in the refrigerator for up to 3 days. It is best when eaten within 2 days.
