Instructions
In a large mixing bowl of an electric mixer, combine butter, shortening, and sugar. Cream well.
Add egg and egg yolk and mix well. Continue mixing while adding vanilla extract and milk.
Mix flour, cornstarch, baking soda, and salt together. Gradually add to wet ingredients.
Stir in chocolate chips.
Place dough in refrigerator and chill at least 2 hours or for up to 2 days. This will help slow spreading and help cookies keep their lift.
Preheat oven to 325°F. Line cookie sheets with parchment paper.
Using a medium cookie scoop, about 2 Tablespoons, scoop heaping portions onto cookie sheet, about 9 cookies per sheet, this will help them bake more evenly. With your fingers, shape them into chunky columns, in other words taller rather than wider, to help with the spreading.
Bake for 11-13 minutes or until the cookies start to turn a golden brown but the middle looks slightly underbaked (this will help keep the cookies soft). Place the cookie sheet on a wire rack and let the cookies cool for 5-8 minutes. You can add extra chocolate chips to the top of the cookies at this time if you like a richer chocolate cookie.
Remove the cookies to the wire rack to cool completely.
