Spicy BLT with avocado
This Spicy BLT is spread with fresh jalapeno mayo then piled high with crisp bacon, juicy tomato slices, arugula and sliced avocado. It’s bold, fresh, a little spicy, and completely irresistible!

Ingredients
For Sandwich
4
thick slices sourdough
focaccia, or white mountain bread
1
clove
garlic
optional

bacon - option to use pepper coated bacon or jalapeno bacon

large slices tomatoes
1
avocado, sliced
arugula
Jalapeno Mayo
½
cup
mayonnaise
2
jalapeno peppers
minced
1
clove
garlic
minced

teaspoons
lime juice

Tablespoons
cilantro
chopped (parsley can be subbed)

pepper
Instructions
For mayo
Add all ingredients to a blender or food processor and blend until smooth. You can also use an immersion blender.
For Sandwich
Toast bread and, if using, rub a garlic clove on top.
Place 2 slices on plate, garlic rubbed side down and spread with jalapeno mayonnaise. (You will have some leftover.)
Top with 3 slices of cooked bacon, 1 slice tomato, ½ sliced avocado and a pile of arugula. Top with remaining bread slices, cut in half and enjoy.
