These adorable Valentine's Day soft meringue cookies are the perfect treat for your sweetheart. A cute heart-shaped cookie with a light vanilla flavor that bakes up fluffy, soft, and chewy.
Preheat the oven to 200° F. Line a cookie sheet with parchment paper. Set aside.
In the bowl of an electric mixer, combine egg whites and cream of tartar. Beat until egg whites are frothy.
Once frothy, continue mixing and slowly add in the sugar.
Add in the vanilla extract.
Blend at medium high speed for about 10 minutes until you have a marshmallow-like soft meringue that barely holds a peak.
Divide the mixture in half, dying one half with red food coloring.
Place the two colors into piping bags and snip the end.
Place both piping bags in a third empty piping bag to create a blend of the two colors.
On the prepared cookie sheet, pipe out heart-shaped cookies and top with sprinkles.
Place in the oven for 1 hour.
Let cool on wire rack. You will have a firm, but soft to bite meringue cookie!
Notes
Store the cookies in an airtight container with parchment paper between layers for up to 1 week. They can be frozen but the texture will change. I do not recommend freezing them.
