Get your healthy on with this easy and delicious air fryer coconut shrimp. The coconut shrimp is crunchy, slightly sweet, and takes just minutes to make.

INGREDIENTS Shrimp Flour Garlic Powder Panko Crumbs Coconut Flakes Eggs Dipping Sauce Mango Orange Marmalade Lime Juice

STEP 1. Place mango into food processor  STEP 2. Add orange marmalade. STEP 3. Pour in lime juice. STEP 4. Process til smooth.

HOW TO MAKE MANGO DIPPING SAUCE

STEP 1. Combine flour with seasonings in a bowl.  STEP 2 On a flat plate, mix panko crumbs and coconut flakes.

HOW TO MAKE COCONUT SHRIMP

STEP 3. Whisk eggs in another bowl.

STEP 4. Dredge shrimp in seasoned flour. STEP 5. Dip into whisked egg.

SET UP ASSEMBLY LINE

STEP 6. Coat with panko-coconut mix. Repeat with remaining shrimp.

STEP 7. Lay shrimp in air fryer basket. Spray with oil. STEP 8. Cook for 8 minutes at 375 degrees.

Plate these crispy, delicious fried coconut shrimp onto a platter along with the dipping sauce. Garnish with parsley for the finishing touch!
