These gluten free chicken nuggets are seasoned, coated in crispy gluten-free breading, and baked for a healthier twist on the classic. Popular with toddlers and big kids alike!

Ingredients

old-fashioned rolled oats
ground

lb.
ground chicken
1
teaspoon
paprika
divided
½
teaspoon
garlic powder
¼
cup
Parmesan cheese
divided
½
teaspoon
black pepper
½
teaspoon
salt
¾
cup
gluten free breadcrumbs or panko crumbs
Instructions
Preheat oven to 375 degrees. Spray a large cookie sheet with nonstick spray.
Using a food processor - grind oats into breadcrumb size pieces.
Combine oats, chicken, ½ teaspoon paprika, garlic, 2 tablespoons Parmesan cheese, salt, and pepper in a large bowl and mix well.
In a small bowl, mix together remaining paprika, Parmesan cheese, and breadcrumbs or panko crumbs.
Take 1 tablespoon of chicken mixture, press into nugget shape with fingers, and coat with breadcrumb mix.
Place nuggets on prepared cookie sheet and bake for 18-20 minutes, turning once after 10 minutes.
