Crispy and flavorful, air fryer fingerling potatoes are the perfect side dish. Simple ingredients and 25 minutes give you the perfect potatoes every time.
Wash and dry fingerling potatoes then slice in half lengthwise.
Place them in a large bowl and toss with olive oil, minced garlic, Italian seasoning, salt and pepper.
Place in air fryer basket and cook at 400 degrees for 15 minutes, shaking after the first 8 minutes.
Pour into a serving bowl, toss with Parmesan cheese then sprinkle with sliced green onions or parsley.

FREEZE/STORE/REHEATTo Store: Cool the potatoes to room temperature. Place them in an airtight container and refrigerate them for up to 5 days.To Freeze: Place cooled potatoes in a freezer-safe container or plastic freezer bag. Freeze them for up to 3 months. Thaw them in the fridge overnight.To Reheat: Air fry the potatoes at 350°F for 4 minutes or until heated through.
