Apple Parfait
A delicious & easy Apple Parfait that has all the flavors of your favorite apple pie but with a healthy twist of yogurt and granola. Breakfast or dessert never tasted so good!

Ingredients
1
apple
½
cup
vanilla Greek yogurt
(I like to use zero sugar variety)
¼
cup
granola
1
teaspoon
brown sugar
¼
teaspoon
cinnamon
⅛
teaspoon
vanilla extract
Garnish: thin apple slices
Instructions
Breakfast
Cut apples in quarters and core. Slice 3 thin slices from one of the quarters then dice the remaining apple.
Place diced apple in a microwave-safe bowl. Sprinkle with brown sugar, cinnamon and vanilla and toss to coat.
Cover and cook in microwave on high for 2 minutes. Stir.
To assemble parfait, place half of the yogurt in the bottom of a glass. Top with half of apples and half of the granola.
Repeat layers.
Garnish with 3 thin slices of apple and dig in.
Dessert (option)
Sub crumbled Cinnamon Toast Crunch cereal for the granola.
To garnish, place a dollop of whipped cream on top, dust with more cereal crumble, and finish with a drizzle of caramel syrup over all.
