    Wake up in the morning to a deliciously cinnamony Apple Parfait. It has all the flavors of your favorite apple pie but with a healthy twist of yogurt and granola. Take it up a notch with Cinnamon Toast Crunch Cereal, whipped cream, and a caramel drizzle and it turns into dessert!

    I'm a lover of anything that contains yogurt! And when I'm eating a dish with yogurt in it, I always feel like I'm getting a little bit of healthy along with my indulgence. Its tangy flavor and creamy texture go so well with other ingredients, and you get the benefit of its protein and probiotic content. It's a win-win!

    Delicious favorites of mine that can go from breakfast to dessert are French Toast Overnight Oats, Strawberry Swiss Cake Roll, Chocolate Raspberry Trifle, and, of course, a Banana Oatmeal Smoothie.

    For a delicious dessert version, swapping the granola for crumbled Cinnamon Toast Crunch cereal and topping it with whipped cream and caramel sauce takes this dish from a healthy breakfast or snack to an indulgent treat. It's versatile, simple, and perfect for any time of day.

    This recipe is made with a handful of simple ingredients that you probably already have on hand. Here's what you'll need:

    Apple - Fresh apples provide the sweet, juicy flavors of apple pie. You can opt to use apple pie filling for easier prep.

    Granola - Use your favorite storebought granola or try this easy homemade Vanilla Almond Granola or step it up with more apple flavor with Apple Granola.

    Brown sugar - adds sweetness to the apples

    Apple Pie Spice - the sweet warm flavors of your favorite apple pie.

    Vanilla Extract - just a touch adds a bit of flavor and makes the other ingredients seem sweeter.

    How to make apple parfait with yogurt

    This parfait comes together in a few simple steps. It's quick, easy, and tastes like a treat, whether you're making it for breakfast or a no bake dessert.

    How to make and layer an apple yogurt parfait.
    1. Quarter and core apple. Slice 3 thin slices from the apple then dice remainder. Combine the diced apple with cinnamon, brown sugar, and vanilla extract in a microwave-safe, small bowl.
    2. Toss to coat.
    3. Microwave for 2 minutes on high.
    4. To assemble, place half the yogurt in the bottom of a wide-mouthed glass, a mason jar, or a parfait glass. Top yogurt with half the cinnamon apples, then with half the granola. Repeat the layers and garnish with apple slices.

    Ingredients

    • 1 apple
    • ½ cup vanilla Greek yogurt (I like to use zero sugar variety)
    • ¼ cup granola
    • 1 teaspoon brown sugar
    • ¼ teaspoon cinnamon
    • ⅛ teaspoon vanilla extract
    • Garnish: thin apple slices

    Instructions

    Breakfast

    • Cut apples in quarters and core. Slice 3 thin slices from one of the quarters then dice the remaining apple.
    • Place diced apple in a microwave-safe bowl. Sprinkle with brown sugar, cinnamon and vanilla and toss to coat.
    • Cover and cook in microwave on high for 2 minutes. Stir.
    • To assemble parfait, place half of the yogurt in the bottom of a glass. Top with half of apples and half of the granola.
    • Repeat layers.
    • Garnish with 3 thin slices of apple and dig in.

    Dessert (option)

    • Sub crumbled Cinnamon Toast Crunch cereal for the granola.
    • To garnish, place a dollop of whipped cream on top, dust with more cereal crumble, and finish with a drizzle of caramel syrup over all.
