Banana Oatmeal Chocolate Chip Bars are an easy to make sweettreat! Soft, chewy, and packed with flavor they’re perfect for breakfast, snacks, or dessert.
Preheat oven to 350°F. Line a 8-inch square baking dish with parchment paper. Use enough to come up over the sides to help you lift them out when they are done. Spray the parchment paper with cooking spray.
In the bowl of an electric mixer, combine the mashed bananas, egg, sugar, maple syrup, butter, and vanilla extract. Beat until combined. You can also do this by hand if you don't want to dirty your mixer. The mixture will be liquidy.
Fold in the rolled oats, flour, cinnamon, baking soda, and salt until just mixed.
Add ¾ cup chocolate chips and stir to distribute.
Scoop into the prepared baking dish and smooth out the top.
Sprinkle with the remaining ¼-1/2 cup chocolate chips.
Bake for 25 minutes, or until the middle looks set.
Place the baking pan on a wire rack and let the bars cool. The longer they cool the easier it is to cut them. I like to wait at least an hour before slicing and serving.

STORE/FREEZETo store, place the cooled bars in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.To freese, wrap individual bars in plastic wrap and place them in a freezer-safe bag or container. They’ll keep for up to 3 months.
