Banana Oatmeal Chocolate Chip Bars
Ingredients
- 1 medium ripe banana (about ½ cup mashed)
- 1 large egg
- 6 Tablespoons light brown sugar, packed
- 2 ¼ Tablespoons pure maple syrup
- 3 Tablespoons butter room temperature
- 1 ½ teaspoons vanilla extract
- 1 ¼ cups old-fashioned rolled oats
- 1 cup all-purpose flour
- ¾ teaspoon cinnamon
- ¾ teaspoon baking soda
- ⅛ teaspoon salt
- 1 to 1-¼ cups semi-sweet chocolate chips, divided
Instructions
- Preheat oven to 350°F. Line a 8-inch square baking dish with parchment paper. Use enough to come up over the sides to help you lift them out when they are done. Spray the parchment paper with cooking spray.
- In the bowl of an electric mixer, combine the mashed bananas, egg, sugar, maple syrup, butter, and vanilla extract. Beat until combined. You can also do this by hand if you don't want to dirty your mixer. The mixture will be liquidy.
- Fold in the rolled oats, flour, cinnamon, baking soda, and salt until just mixed.
- Add ¾ cup chocolate chips and stir to distribute.
- Scoop into the prepared baking dish and smooth out the top.
- Sprinkle with the remaining ¼-1/2 cup chocolate chips.
- Bake for 25 minutes, or until the middle looks set.
- Place the baking pan on a wire rack and let the bars cool. The longer they cool the easier it is to cut them. I like to wait at least an hour before slicing and serving.
