Prepare the apples by cutting the apples in half then, using a small round scooper or measuring spoon, scoop out the apple. Keep at least ¼" of the apple above the peel. Do NOT cut out the bottom of the apple.
Sprinkle lemon juice on the exposed apple edge to prevent browning.
Place apples firmly into a muffin tin so that they don’t dopple.
In a small saucepan, sprinkle the gelatin on top of the bourbon. Allow the gelatin to bloom for two minutes.
Whisk the bourbon and gelatin together, and place on low heat. Continue to stir until the gelatin fully disolves.
Once, dissolved, remove from heat. Whisk in the condensed milk and caramel sauce then pour into the hollowed out apples.
Chill in the fridge for a minimum of 4 hours to fully set.
Use a sharp knife to smoothly cut the apple slices and serve.
