1 pkg refrigerated chocolate chip cookie dough, (homemade or store bought can also be used)
1 pint ice cream, any flavor (you'll use about 1-½ cups)
Garnishes: sprinkles, chocolate chips, candy

Preheat oven to 350°F to bake refrigerated cookies.
Using a medium cookie scoop, scoop dough onto an ungreased cookie sheet. Leave about 2" between cookies.
Bake 12-13 minutes or until lightly browned. Check the package and follow the directions if different from those above.
Let cool on the cookie sheet for 2 minutes then remove to wire rack to cool completely.
When ready to assemble ice cream sandwiches, take ice cream out of freezer and let soften for about 5 minutes.
Scoop ice cream onto the bottom of one cookie. Put more or less depending on how thick you want your ice cream sandwich. Place another cookie on top and gently press together.
Immediately roll ice cream edges in sprinkles, chocolate chips, candy, chopped nuts, or coconut.
Wrap individually and freeze until ready to eat.
