A Fun and Cool Dessert for Summer
Do you love ice cream and cookies? If you're like me, they are a staple in your house and you could eat them any time of day or, for that matter, any time of year!
If you're like me, you love products that make my life easier, especially when kids are helping with cooking and baking. They like helping in the kitchen, so planning something easy and fun for them is good.
This recipe starts out with a package of premade chocolate chip cookie dough so all they have to do is just scoop and bake. Of course, these cool treats wouldn't be complete without their favorite flavor of creamy ice cream.

You'll only need 3 simple ingredients, well, actually 2 if you don't want to decorate them.
- Chocolate Chip Cookie Dough - Nestle Toll House or Pillsbury recommended
- Vanilla Ice Cream - Ben & Jerry's, Haagen-Dazs, or other premium ice cream.
- Sprinkles, Mini Chocolate Chips, or Other Garnishes (optional)
Best Cookies for Ice Cream Sandwiches
You want soft and chewy cookies for ice cream sandwiches. Crunchy cookies will break and crumble when trying to eat the sandwich.
How to Make Ice Cream Cookie Sandwiches
- Preheat oven to 350 degrees Fahrenheit. Scoop the cookie dough right out of the package and place it on an ungreased cookie sheet.
- Bake for 12 to 13 minutes. Let cool on a wire rack.
- Let ice cream soften for about 5 minutes then scoop out and place on a cooled chocolate chip cookie.
- Place another cookie on top and press together gently. Run a knife around the edge to smooth out the ice cream.
- Decorate the ice cream sandwich by rolling in sprinkles and enjoy!
I've got to warn you, these delicious chocolate chip cookie ice cream sandwiches don't hang around for long. If you're smart, you might hide one or two for yourself before they're all gone.
Recipe Tips
- Bake the cookies so they are soft and not crunchy.
- Freeze the cookies before assembling the sandwiches. This will harden them and make it easier for assembly.
- Tightly each sandwich in plastic wrap to hold the assembled sandwich together.
- Make one sandwich at a time, wrap it in plastic, and place it in the freezer as soon as it’s assembled. You don't want the first ones to be melting while you are making the rest of them.
- Freeze the assembled cookies for at least 3 hours so the sandwiches are frozen enough to easily pick up and enjoy.

This may be a simple 3-ingredient recipe, but it has endless possibilities with different combinations. Here are some ideas:
- Use different cookie dough: Chocolate, Funfetti, M&M's, Peanut Butter, Sugar Cookie, White Chocolate Chip, Turtle, and seasonal cookies.
- Use different ice cream: Chocolate, Cookie Dough, Dulce de Leche (caramel), Mint Chocolate Chip, Peanut Butter, or fruit flavors.
- Use frozen yogurt or gelato: Lots of flavor options with these too.
- Use different garnishes: Mini chocolate chips, mini M&M candies, jimmies, sugar pearls, fun-shaped sprinkles, or seasonal sprinkles for holidays.
You can also vary the size:
- Make giant ice cream sandwiches by using an ice cream scoop to portion the dough. You'll need to bake it a little longer.
- Make mini ice cream sandwiches by using a tablespoon to portion the dough. You'll need to bake it a little less.
How to Store
Once the ice cream sandwiches are assembled, make sure you individually wrap them in plastic wrap or freezer wrap. Place the wrapped ice cream sandwiches in a freezer-safe container or plastic freezer bag. Ice cream sandwiches will last for up to a month in the freezer.

Chocolate Chip Cookie Ice Cream Sandwiches
Equipment
Ingredients
- 1 pkg refrigerated chocolate chip cookie dough, or opt to make your own or purchase fresh cookies from the bakery
- 1 pint ice cream in your favorite flavor (you'll use about 1-½ cups)
- Garnishes: sprinkles, chocolate chips, candy
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Using a medium cookie scoop, scoop dough onto an ungreased cookie sheet. Leave about 2" between cookies.
- Bake 12-13 minutes or until lightly browned. Check the package and follow the directions if different from those above.
- Let cool on cookie sheet for 2 minutes then remove to wire rack to cool completely.
- When ready to assemble ice cream sandwiches, take ice cream out of freezer and let soften for about 5 minutes.
- Scoop ice cream onto the bottom of one cookie. Put more or less depending on how thick you want your ice cream sandwich. Place another cookie on top and gently press together.
- Immediately roll ice cream edges in sprinkles, chocolate chips, candy, chopped nuts, or coconut.
- Wrap individually and freeze until ready to eat.
