Preheat oven to 350 degrees F. Grease and flour a 9x5-inch loaf pan. Set aside.
In a large bowl, place sugar and shortening together and cream well.
Add eggs and vanilla and mix well.
Stir in mashed bananas.
Combine the remaining ingredients, excluding chips, and mix into banana-egg mixture.
Fold in chocolate chips.
Pour into prepared loaf pan and bake for 65-75 minutes or until toothpick in center comes out clean.
Remove from oven and set on wire rack to cool for 15 minutes. Remove from pan and finish cooling bread on rack.

STORE/FREEZEStore: I store mine in a gallon-sized Ziploc bag. It keeps the bread perfectly moist for about 1 week.Freeze: Wrap the cooled bread in plastic wrap and then either another layer of aluminum foil or in a plastic freezer bag. Freezing individual slices is a great idea. You can freeze it for up to 3 months. Thaw it in the fridge or on the counter.
